The Fast 800’s Bean Soup with Kale and Pesto

Super-quick and easy, this tastes fabulous topped with the fresh basil pesto. You can use any of your favourite beans – just keep the quantities the same.
 
 
SERVES 4
 
2 tbsp olive oil
1 medium onion, peeled and roughly chopped
1 celery stick, cut into roughly 1cm chunks
2 medium carrots, trimmed and cut into roughly 1cm chunks
1 medium zucchini, trimmed, halved lengthways and cut into roughly 1cm slices
1 × 400g can cannellini beans, drained
1 × 400g can borlotti or kidney beans, drained
1 vegetable or chicken stock cube
75g kale or dark green cabbage, thickly sliced, and tough stalks discarded
60g fresh basil pesto
 
 
1. Heat the oil in a large non-stick saucepan, add the onion, celery, carrots and zucchini and gently fry for 10 minutes, stirring occasionally.
 
2. Tip the beans into the pan, add the stock cube and 1.2 litres water and stir to dissolve. Add the kale or cabbage and bring to a simmer. Cook for 5–7 minutes, stirring occasionally, until the vegetables are tender.
 
3. Season with sea salt and ground black pepper to taste, then ladle into warmed bowls and top with the pesto.
 
 
COOK’S TIP
 
You’ll find tubs of fresh basil pesto in the chilled department of the supermarket, usually with the fresh pasta, but you can use the jarred kind as well.
 
 
NON-FAST DAYS
 
Serve with a drizzle of olive oil and toasted wholegrain or sourdough bread. For extra sustenance, add some diced fried halloumi or bacon.
