PEACH AND BOCCONCINI SALAD
(serves 4)
Ingredients
200 grams bocconcini
3 ripe peaches, sliced
2 cups rocket
½ cup fresh mint
½ cup fresh basil
½ cup fresh parsley
2 tablespoons mixed pumpkin and sunflower seeds
Dressing
1 tablespoon extra-virgin olive oil
1 tablespoon honey
1 lemon, juiced
2 teaspoons apple cider vinegar
pinch of chilli flakes
salt and pepper
Method
1. To make the dressing, add the ingredients to a sealable jar and shake well.
2. Slice the bocconcini.
3. Assemble the salad ingredients in a salad bowl and toss to combine. Drizzle the dressing over the top. Enjoy this summer deliciousness!
